Fresh Spring Panzanella (Tuscan bread salad)

So I was starting to prepare a mundane dinner with no real inspiration when I logged on to facebook and there, from my Texas relatives was a picture of Panzanella. Never made it. Never seen it. Never heard of it. Had to make it. After a couple of glances over online recipes I dove in with what was on hand. It was awesome and HAD to be shared. As follows:

(all cubed veggies and bread are 1/2" cubes)

4 small cucumbers peeled and cubed
2 tomatoes cubed
1 1/2 cups cubed Focaccia bread (any dry crusty bread will do)
3 green onions diced
1/2 yellow bell pepper diced
2 Tbsp chopped garlic
2 Tbsp fine chopped basil
1/2 cup mozzarella (cubed would be nice but I had grated)
1/4 cup extra virgin olive oil
1/2 tsp sea salt
1/2 tsp fresh cracked black pepper
2 Tbsp + balsamic glaze
6 coarse chopped basil leaves

Mix cucumber, tomatoes, bread, bell pepper, greeen onion and mozzarella. Combine garlic, fine chopped basil, salt, pepper, and olive oil. Toss with veggie- bread mixture. drizzle with balsamic glaze. Top with coarse chopped basil. Its best if you let it rest 10 or 15 minutes.Enjoy!
